How to toss a healthy moong dal salad using a microwave oven

The festival season is almost over. How about going for a post-festival detox with a healthy moong dal moongfali salad? This power-packed healthy salad can be served as an appetizer or even light lunch. At the third edition of Home Chef Matters, Godrej Appliances launched a microwave digital cookbook that lists a wide range of healthy recipes. “This refreshing low-calorie dish can be easily prepared in a microwave. Not many people know that soaked moong dal cooks very well in a microwave and gives a crunchy taste. To add more crunch to this salad, moongfalis (groundnuts) are used as a garnish,” said Chef Shital Kakad who counts this recipe as her childhood favourite. Brown/red rice 0.5 cup/s
Moong dal (yellow lentil) 0.5 cup/s
Radish leaves 0.5 cup/s
Fresh groundnuts 0.5 cup/s
Extra virgin olive oil 3 tablespoon/s (tbsp)
Soya sauce 2 tablespoon/s (tbsp)
Black pepper powder 0.5 tablespoon/s (tbsp)
Lemon 1 piece/s
Salt to taste


Soak the moong dal for two hours. Soak the rice for about 30 minutes. After the time specified, put the rice in a microwave-safe bowl. Pour a cup of water in it and microwave on high for 15 minutes. If the rice is not done, you can microwave for five more minutes. Similarly, put the soaked moong dal in a microwaveable bowl. Add a tablespoon of olive oil and microwave it for about two minutes until it becomes crunchy.

In a separate microwave dish, boil the fresh groundnuts in some salted water. Cool, peel and keep them aside. Prepare the dressing by mixing soya sauce, olive oil, lemon juice, salt and pepper. Chop the radish leaves and keep some aside for garnishing.

For plating, spread some whole radish leaves on a plate. Start layering the salad by first spreading the brown rice, followed by moong dal, and then the radish leaves and boiled groundnuts. Now, drizzle the dressing all over it. Instead of layering, you may choose to mix all the ingredients together and place it on the radish leaves. Moong dal and moongfali salad is ready to be served!
