Eggless Chocolate Pudding

Ingredients

Full Cream Milk 250 millilitre (ml)
Fresh Cream 150 millilitre (ml)
Cocoa Powder 2 tablespoon/s (tbsp)
Caster Sugar 5 tablespoon/s (tbsp)
Cornflour 2 tablespoon/s (tbsp)
Instant Coffee Powder 1 tablespoon/s (tbsp)
Vanilla Essence 1 teaspoon/s (tsp)
Dark Chocolate 100 gram (g)
Butter 1 tablespoon/s (tbsp)
Whipped Cream 3 tablespoon/s (tbsp)

Method

In half cup milk, add cocoa powder, cornflour, coffee powder, sugar and mix well, until everything is combined and there are no lumps.Keep it aside.

Now in a heavy bottom saucepan, add the remaining half cup milk. Add 1/2 Cup cream to it. Let this come to a boil. Once boiled, lower the flame, and add prepared milk mixture, that we made in point one. Make sure to whisk it continuously, while pouring it, to avoid any lumps. Now whisk everything together and let it simmer for about 3 to 4 mins. It will slowly start thickening.

Add the dark chocolate and mix for another 2 mins. Switch off the flame. Lastly add vanilla essence and butter. Mix it. Pour the mixture into your serving glasses, or ramekins, or cups or bowls. Let it come to room temperature. Now cover it with a cling film, and refrigerate for about at least 4 hours. You can also let it set overnight. It becomes more and more thick as it chills.

Top it with whipped cream, cocoa, chocolate shavings, chocolate chips, nuts of your choice, anything that you’d prefer. I also love it with some crushed cookies on top.
