Bagel Sandwich

A perfectly toasted bagel, dressed up for Spring season! That is what a Bagel Sandwich is for me. I love bagels - be it for breakfast, lunch, or dinner. This particular sandwich is good for breakfast or a regular meal. It includes lots of veggies and salad greens. Has a good amount of cream cheese, which can be replaced by hummus to make it vegan. Dress it up with colorful veggies, edible flowers, sunflower, or melon seeds, a good smear of cream cheese or hummus, and it's a wholesome meal.

Ingredients

Bagels 2 piece/s
Cream Cheese 3 tablespoon/s (tbsp)
Hummus 3 tablespoon/s (tbsp)
Salad greens (baby spinach/arugula/other greens) .5 cup/s
Cherry Tomatoes 5 piece/s
Regular tomatoes 1 piece/s
Avocado 1 piece/s
Sunflower seeds 1 tablespoon/s (tbsp)
Melon seeds 1 tablespoon/s (tbsp)
Salt pinch
Freshly crushed pepper pinch
Olive oil splash

Method

  1. Slice bagels horizontally into 2 pieces.  Toast it.  You can also skip the toasting part if you like your bagels to be soft.
  2. Spread cream cheese or hummus on each side of the bagels.
  3. Top one side with salad greens, tomato slices, avocado slices.  I have used small heirloom cherry tomatoes. You can use any.
  4. Sprinkle sunflower seeds/melon seeds on top.  Add a dash of salt and pepper, a drizzle of olive oil.  Optionally you can top it with edible flower petals, and/or also make the avocado slices into an avocado rose and top the bagel with that for a beautiful presentation.  You can either top it with the other side of the bagel or just serve it as an open-faced sandwich. 

    Enjoy this gourmet bagel sandwich with a cup of coffee or tea.
