India boasts of a rich food heritage, which includes not just recipes, cookware or cooking techniques, but even varieties of produce, cereals and grains. One such example is the humble rice. Most of us are familiar with Basmati, kolam or parboiled, but did you know that India has over a thousand indigenous varieties of rice?
