Here’s a look at India’s traditional rice varieties and what you can make with them.

India boasts of a rich food heritage, which includes not just recipes, cookware or cooking techniques, but even varieties of produce, cereals and grains. One such example is the humble rice. Most of us are familiar with Basmati, kolam or parboiled, but did you know that India has over a thousand indigenous varieties of rice? As we look inwards and explore eating local, why not give some of these lesser-known gems of India’s rice bowl a try? Here are six indigenous rice varieties and what you can make with them.
