
Celebrating Spring with a Yellow Feast: From Saffron Lassi to Rice
Let’s explore a menu inspired by Basant Panchami's yellow theme

In India, the spring season is celebrated with Basant Panchami, a festival dedicated to welcoming warmth and abundance. And what better way to embrace this joyous occasion than with a delectable feast painted in the hues of the sun itself – yellow!
Saffron lassi

Let's begin our yellow journey with a refreshing and traditional drink – the saffron lassi. This creamy yoghurt-based beverage is infused with the delicate aroma and subtle sweetness of saffron, making it the perfect way to cool down and awaken your senses. Blend chilled Godrej Jersey rich curd with water, sugar, saffron and a pinch of cardamom powder. Garnish with slivered pistachios and rose petals for an extra touch of festivity.
Turmeric pancakes

Next up, we bring a twist to breakfast (or brunch!) with turmeric pancakes. In a bowl, whisk together flour, baking powder, sugar, and a generous helping of turmeric powder. Don't forget a pinch of salt for balance! Combine wet ingredients like milk, egg, and melted butter, then gently fold them into the dry mixture. Pour batter onto the pan and watch as golden circles come to life.
Saffron rice

Start with a bed of fluffy saffron rice, its strands adding a luxurious touch and delicate aroma. Alongside, prepare a hearty dal made with yellow moong dal (lentils). Simmer the dal with turmeric, cumin, coriander, and a touch of garam masala for a burst of flavour. Arrange everything beautifully on a platter, and voila! You have a feast fit for a spring celebration.
Shrikhand

No meal is complete without dessert, and for our Basant Panchami feast, we'll keep it yellow and delicious. Opt for saffron-infused shrikhand or basundi- creamy and rich condensed milk sweets. Gather your loved ones, spread the tablecloth of sunshine yellow, and embark on a delicious adventure that celebrates the season's bounty.
