Gujiya, ghughra, karanji, pedekiya, karjikayi and karachika — there are many names by which this festive favourite is called. Karanji is usually prepared in various parts of the country during different festivals including Holi, Ganesh Chaturthi and Diwali. The crescent-shaped, fried dumplings are versatile and made with a variety of fillings, including grated coconut, dried fruits, khoya, and even sooji halwa! In the latest video in the Sahi Shuruaat series, Chef Varun Inamdar shares a tried-and-tested karanji recipe — that of his mother’s — which he stuffs with homemade khoya and then fries in Godrej Rice Bran Oil. Rich, delicious, crunchy are just some of the words that can be used to describe this regional delicacy. All we would like to say is, Diwali (and the festivities) just got a whole lot tastier!
