Kabuli Pulao

This sweet Afghani pulao redolent with spices is a must-try! Originating in Afghanistan, this lamb and long-grain white rice dish is mixed with a handful of raisins and carrots. The caramelised onions impart a nice brown colour to the rice. The subtle sweetness is balanced with the crunchiness of fried carrots and raisins. Add almonds, pistachios and cashews to give it a rich texture and flavour.

Falsa Sharbat

This tangy summer drink is made from a blend of fresh falsa (an Indian berry high in Vitamin C), sugar, water, ice, and black salt. Add a dash of lemon, mint leaves and roasted jeera powder. Serve this cooling drink along with potato fritters.

Shami Kebabs

It’s a great side dish with chicken biryani. The tender meat patties are eaten as an appetiser during Iftar across India. This special wholesome kebab is made using ground mutton or chicken and stuffed with aromatic spices. Serve with coriander and mint chutney, onion rings and lemon. You can make a big batch and freeze it, and fry a few every alternate evening.

Sheer Khurma

This humble dessert is a star in most homes during Ramzan. The rich dessert is made with milk, seviyan (vermicelli), dates and loads of nuts. Add khoya (dried milk solids) to make it creamier and more flavourful. The most important ingredient is nutritious dates, which are consumed more in this holy month to break the fast. Flavour the dish with rose water and cardamom.

Shahi Tukda

Make your celebrations sweeter by preparing this delicious dessert. The succulent deep-fried bread squares are served with kheer and garnished with almonds, pista and cashews. Add kewra water and kesar to give it a royal touch.
