The holiday season is upon us, and what better way to spice up your Christmas classics than by adding a dash of culinary innovation?

According to the Godrej Foods Trends Report, 2023, there is an increasing focus on regional Indian flavours that will see consumers opting for traditional desi oils over imported options for Indian cooking.

When asked about this trend, Chef Ashish Bhasin said, “Diners’ understanding and knowledge of oils, their extraction and impact on their health have improved. In Indian cooking, oil is subjected to high temperatures. Refined oils with high PUFA degrade easily into harmful toxic components. Alternatively, our regional oils have higher smoking points and are thus advised for cooking.”

Kachi ghani oils are a secret weapon that can transform your holiday feast from ordinary to extraordinary. Derived from traditional cold-pressing methods, these oils retain their natural goodness and bring a rich, authentic flavour to your dishes.

However, there are certain tips and tricks to follow when using these oils. Moderation is key; it’s crucial to add them in small amounts initially and adjust according to your taste preferences. Additionally, don’t be afraid to experiment with combinations, mixing and matching different oils to create unique flavour profiles. For instance, a dash of mustard oil combined with a subtle hint of olive oil might just be the secret ingredient to elevate your new holiday signature dish.

Let’s dive into the world of these oils and how you can use them:

Mustard oil

Give your Christmas chicken a makeover with the robust flavours of mustard oil. Marinate your bird with a concoction of mustard oil, garlic, and a hint of honey for a mouthwatering twist that will have your guests begging for the recipe. The high smoking point of mustard oil also makes it perfect for roasting, ensuring a crispy and golden exterior.

Olive oil

Elevate your salad game with infused olive oils. Imagine a drizzle of rosemary-infused olive oil over your roasted vegetables or a garlic-infused version enhancing the flavour of your homemade pizza. The possibilities are endless, and these oils add a touch of sophistication to your holiday spread.

Sesame oil

Give your Christmas cookies a unique twist with toasted sesame oil. The nutty aroma adds a depth of flavour that will surprise and delight your taste buds. Toasted sesame oil is also fantastic in stir-fries or drizzled over beans for a festive side dish.

Coconut oil

Switch things up in your baking by substituting traditional fats with coconut oil. Whether it's in your Christmas cookies, cakes, or even a coconut-infused eggnog, this tropical twist will transport your taste buds to a holiday paradise.

Cheers to a festive season filled with delicious twists and tasty surprises!
