Roti quesadilla

Got some leftover rotis? We’ve got a fusion food idea.

Roti quesadilla

Prep: 3–4 min · Cook: 6–8 min · Serves: 1–2

Ingredients

  • 2 leftover rotis (cold or room temp)
  • 4 Godrej Yummiez Cheese Corn Nuggets, cooked and sliced (or 6 if you’re really hungry)
  • 2 tbsp mint chutney or schezwan sauce or tomato ketchup
  • 1–2 tbsp grated cheese (cheddar/mozzarella)
  • 2 tbsp chopped bell pepper, 1 tbsp chopped onion
  • 1 tsp butter or oil for toasting

What you need to do

  • Lay the roti flat. Spread your chosen sauce over one half, mint chutney, schezwan for a kick or ketchup, if you please.
  • Line the sauced half with sliced cheesy nuggets, scatter bell pepper, onion and corn, then add grated cheese.
  • Fold the other half of the roti over to make a semicircle. Press gently.
  • Heat butter or oil on a skillet over medium heat. Toast the quesadilla 2–3 minutes per side until golden and crackly and the cheese melts. Press down with a spatula once or twice to help it seal.
  • Slice into wedges, serve hot.

Quick tips

  • For extra crispness, drizzle a few drops of oil around the edge in the pan so the roti gets crunchy.
  • Add a sprinkle of chaat masala or chilli flakes inside.
  • Make it a meal: pair with a quick salad or yogurt dip.

Paneer pop wraps

  • Pinch chaat masala, lemon wedge

What you need to do

  • Air-fry or pan-fry the Paneer Pops until they’re golden and crackling.
  • Warm your tortilla/roti. Spread mint mayo down the center.
  • Layer lettuce, tomato, onion, then line up 4–5 hot Paneer Pops. Dust with chaat masala and a squeeze of lemon.
  • Fold and roll tightly. For extra hold, toast the seam side down on a pan for 30–60 seconds. Slice in half and serve.
