Their signature cocktail begins with a blend of tomatoes, coriander, salt, and tequila. The process involves a refined milk clarification technique where milk is gently combined with lime to draw out impurities. Once filtered, this produces a nearly crystal-clear liquid, crowned by a delicate spoonful of caviar-like garnish. An infusion of tomato and balsamic is then added, delivering a subtle umami flavor that cleanses the palate with each sip.

Equally celebrated is the Butterfly mocktail, a consistent favourite. This is your third location for Eve, what made you choose this particular place? What is it about Santacruz’s nightlife that makes it the prime destination for a place like Eve? How would you say Santacruz differs from Powai and Worli?
This location is ideal for people from all surrounding neighbourhood suburbs like Bandra, Khar, Juhu. Eve Santacruz is an extension of what we offer at our other outlets in Powai and Worli. Just more accessible to people from this side of the city. Bigger and grander, Eve Santacruz is waiting to woo customers from the area who've had to trek all the way to Worli or Powai so far.

The staircase is a showstopper—beyond its aesthetic appeal, does it hold a deeper brand significance in the restaurant’s story?
 The staircase adds a sense of grandeur to the space – which has been the overall aesthetic for EVE as a brand. From vintage-inspired curios bedecking every corner to the cutlery, every detail intends to add some old-world charm to the dining experience.

How do you balance exclusivity and accessibility—creating a space that feels both opulent and inviting?
 That’s exactly what we’ve enjoyed creating with Eve – a space that truly feels grand but gives a warm and cozy feel. Right from the way our team welcomes customers to the way they’re served and looked after in such an opulent seating space is what makes the whole experience one to remember. With EVE, the aim was to always strike the perfect balance between keeping it premium without really being very heavy on the pocket. And I believe we’ve managed to do just that!

 Lighting plays a transformative role in the ambiance. How did you use it to enhance the grandeur and intimacy of the space?
 We’re big fans of natural sunlight – that’s very important to add a warm feel to any space. During the day, there’s plenty of sunshine. For the night, we’ve picked warm and dim lighting that makes people feel cozy, so there’s lots of candles too.
