Juicy Mutton Tikka in a microwave

The New Year’s Eve party is incomplete without barbecues. How about cooking the compliment-worthy tender mutton tikka in a microwave? Chef Smita Deo’s recipe from the digital cookbook by Godrej Appliancesis a perfect party winner. Thinly sliced mutton is marinated for 3-8 hours with papaya paste, mint, coriander, ginger and garlic paste. The result is juicy and a to-die-for flavour – tender from the inside and crisp on the outside. Mutton Tikka tastes good when served with hot butter naan or a salad.

Ingredients

Boneless chunks of mutton, thinly sliced 0.5 kilogram (kg)
Garam masala powder 1 teaspoon/s (tsp)
Cumin seed powder 1 teaspoon/s (tsp)
Coriander seed powder 1 tablespoon/s (tbsp)
Cardamom powder 0.5 teaspoon/s (tsp)
Spicy green chillies 5 piece/s
Fresh mint leaves 0.5 cup/s
Finely chopped fresh coriander leaves 0.5 cup/s
Raw papaya paste 3 tablespoon/s (tbsp)
Lemon juice 0.5 piece/s
Ginger and garlic paste each 1 teaspoon/s (tsp)
Ghee 1 tablespoon/s (tbsp)
Salt to taste

Method

  • Grind the chillies, mint and coriander to a fine paste with very little water.
  • Marinate the mutton with papaya paste, mint, coriander, chilli paste, garam masala powder, cumin and coriander seed powder, pepper powder, ginger and garlic paste and lemon juice.
  • Let it marinate for 3-8 hours. Put the marinated pieces in a baking tray, drizzle the ghee and place the tray in the microwave.
  • Press ‘CONVEC’. Set temperature to 200 degree C and set the time to 40 minutes. Now press start.
  • After 20 minutes, turn the mutton pieces carefully as they are thin and will get soft because of the papaya paste that we have used as a tenderizer. Cook for 20 more minutes and the mutton tikka is ready to be served. Serve with some salad and hot naan.
