According to the report, there is a shift from traditional beverages and food consumption spaces to more unconventional preferences that are authentic and reflect consumer needs.

The rise in demand for coffee has led to the increased popularity of roasteries and artisanal farm-to-cup coffee from Coorg to Chikmagalur, and beyond. The Indian spirit industry has also seen a spike in demand, as the evolving Indian youth loves to try out various Indian labels along with traditional drinks like feni.

In 2022, inspired by the exotic tastes and unique flavours of Indian specialities and internationally inspired food, consumers are expected to trade in their regular flavours in favour of niche products. The Indian beverage market is growing at an impressive rate and is one of the most dynamic markets globally today.

Commenting on the rise of artisanal beverages in India, Rushina Munshaw Ghildiyal, Curating Editor of the Godrej Foods Trends Report 2022, said, In 2021, beverages were brought into consumers' homes through solutions that put beverage experiences at the fingertips. In addition, consumers, with more time and disposable income, are engaging in hobbies related to their preferences in beverages. It was predicted by our panel that in-home beverages would see more exploration in 2022. Almost half of the panel predicts that artisanal gourmet coffee and tea of Indian origin will continue to grow in the coming years. Mixers for home bartending will be favoured during social gatherings at home. Innovation in these areas will continue to drive the food and beverage industry to cultivate a higher share of the in-home beverage market. The panel also foresees that consumer fascination with ferments is not going away, as hobbyists continue to experiment with homemade fermented drinks.”
