Shepherd’s pie

The classic old favourite can be turned into a lighter, leaner dish by substituting the red meat with ground turkey. Boil the potatoes and mash them well after they have cooled. Preheat the oven to 375 degrees F. Meanwhile, sautee onions, carrots, garlic, thyme, parsley, ground turkey and bouillon (broth). Add some salt, pepper and let the meat cook thoroughly before you add some flour to it. Stir the mixture well. Pour the mixture into a pie pan and spread the mashed potatoes on top of it. Bake the pie for about 30 minutes until the tops of the mashed potatoes turn light golden brown.

Omelette

You might be familiar with turkey sandwiches, but have you tried them in an omelette? Swap the ham for turkey slices the next time you prepare an omelette. Just sauté some onions, mushrooms and turkey to prepare the filling and grate dollops of cheese over it before folding up your omelette. The next time you’re thinking of having turkey for breakfast, you know what to do.

Meatloaf

This recipe can give you a perfect dinner dish that is filling and flavourful. Just follow your usual meatloaf recipe, only replacing the ground red meat with ground turkey meat. Combine the meat, tomato paste, sautéed onions, eggs, breadcrumbs, hot sauce, salt, and pepper in a mixing bowl. Preheat the oven to 350 degrees F. Mix some mustard, hot sauce and brown sugar in a small bowl and set it aside. Place the meatloaf mixture in a lightly greased loaf pan. Bake the meatloaf for about an hour and let it cool for a few minutes. Slice the meatloaf and pour the prepared sauce over it before serving.

Panko-crusted cutlets

Bake them or fry them, these crispy yet tender turkey cutlets taste delicious. All you need to do is dredge some thick slices of turkey in a bowl of beaten eggs and coat them with a mixture of parmesan cheese, dried Italian herbs, salt, and panko breadcrumbs. Cook them to golden brown perfection, squeeze some lemon juice and sprinkle some freshly chopped parsley on top of them. Serve the cutlets with some gravy and sautéed vegetables for dinner or with tomato ketchup as a quick snack.
