Hearty stews to make your monsoon better

These filling stews spell comfort in a bowl and are perfect for combating the chill of those rainy days

The grey clouds have gathered, the mercury has dropped, and the raindrops are beating a steady rhythm against our windows again. What better way to spend those rainy days than with some hearty stew in your bowl? A gastronomic experience that will surely uplift your mood, make sure you try some of these stews this monsoon!

Vegetarian green chilli stew

This Vegetarian Green Chilli Stew is easy to make and tastes as good as they get. This stew is ideal for a quick lunch or even as an evening snack. All you need to do is heat olive oil in a large pot, add potatoes and other vegetables of your choice along with chilli powder, paprika, salt and pepper. Cook, until the potatoes are golden brown. Add spinach leaves, corn and squash into the pot and continue cooking until the leaves wilt. Pour vegetable broth, water and green chillies into the mix. Bring the stew to a boil, then let it simmer till the vegetables become tender.

Chicken stew

This one is a delight for non-vegetarians. In a shallow dish, mix flour, salt and pepper. Add chicken pieces to the mix and coat them evenly. In a separate pan, melt butter and cook chicken until the juices run clear. Add onion and celery and let it cook for three minutes. Add potatoes and carrots to the mix while constantly stirring. In another bowl, mix chicken broth, thyme, ketchup and cornstarch and then pour into the pan. Boil it and let it simmer for another 20 minutes until the vegetables are tender. Add salt to taste.

Creamy veggie potato stew

This thick, filling mixture of potatoes and vegetables will surely leave you satisfied on those rainy evenings. All you need to do is heat water, potatoes, carrots and celery in a saucepan and cook until the vegetables are tender. Drain and set the vegetables aside, and reserve the liquid. In another saucepan, melt butter, add sliced onions and slowly cook until tender. Mix salt, pepper, paprika, heavy cream and flour, and add to the sautéed onions. Add the potatoes and veggies to the mix and continue cooking while adding the broth until the desired consistency is achieved.

Bean and barley stew

Bean and Barley Stew tastes great when paired with some crusty bread. To make this vegetarian stew, heat olive oil in a large pot, then add onion and garlic and cook until they’re tender. Mix mushrooms, chopped yellow bell pepper and some wine, and cook for another five minutes. Stir in cooked barley, boiled beans, tomatoes and spinach. Season with red pepper flakes and some rosemary. Cook until the spinach is wilted.

Kerala mutton stew

Boil mutton along with ginger and set it aside. Boil potatoes and carrots separately and keep them aside. Extract fresh coconut milk twice and keep it aside as well. In a pan, heat oil and sauté garam masala, onion, curry patta, and peppercorns. Add the boiled mutton and vegetables along with the coconut milk extract. Add salt to taste.
