Artisanal ice cream is now at the centre of the spotlight as ice cream, and frozen desserts are undergoing a shift in popularity due to a growing desire for real food with natural ingredients. These findings are highlighted in the Godrej Foods Trends Report 2022 – Collector's Edition, which predicts trends that will dominate the food industry in the coming year based on the contributions of 200+ chefs and culinary experts.

Celebrity chefs, home chefs, professional chefs, food bloggers, health professionals, media professionals, mixologists, nutritionists, restaurateurs, sommeliers, food producers, and more shared deep insights about their respective areas of expertise.

The report also highlights how consumers demand more transparency about their products. This means that brands need to be upfront with consumers about their ingredients. The report revealed that frozen desserts would continue to dominate the palate due to their versatility and ability to be used in many different ways. But it is also noted that when it comes to frozen desserts, artisanal offerings are gaining popularity over mass-produced products because they offer authentic flavours made with natural ingredients that are free from additives or preservatives.

Close to half (48.3%) of experts foresee that artisanal ice cream will be 'cool' in 2022 and the preferred choice for people. A growing desire for real food with natural ingredients has created a shift in the segment of ice cream, bringing artisanal ice cream into the limelight, which can be attributed to a few key factors.

Artisanal ice creams – the new cool

First, there's a growing desire for real food with natural ingredients. This means that people are looking for new ways to enjoy their favourite treats that don't involve artificial dyes or fillers. Artisanal ice creams are made with organic milk, indigenous ingredients, and diet-specific offerings like high protein, probiotic-rich, diabetic-friendly and more due to innovation and small-batch production.

Many people are choosing to eat less processed foods, which is why artisanal ice creams have become so popular—they offer people the opportunity to treat themselves without feeling guilty about it later on down the road.

Artisanal ice creams are customisable based on your individual needs or preferences—whether those preferences include dietary restrictions (like dairy-free or low carb), dietary desires (like vegan), lifestyle choices (like eating locally sourced).

Key Findings of the report

Healthier desserts - 61.7% of the panel predicts desserts with healthier claims will be more popular at home and on restaurant menus.

Artisanal Food - 67.7% of our panel picked locally-made artisanal foods as one of the top priorities on restaurant menus, while 55.6% predict a growing number of home consumers will choose the same at home.

Special diet-based desserts - 31.1% panelists believe that consumers will prefer unique diet-based desserts such as vegan ice cream.

Bite-sized desserts - 57.4% of experts predict that consumers will prefer bite-sized, portion-controlled desserts.

Native Ingredients - 29.2% expect consumers to pay increased attention to local, seasonal and native ingredients.

Lifestyle-driven food ingredients - 58.6% of our panel also see lifestyle-driven alternatives such as vegan, plant-based and more becoming important to consumers.
