According to the report, there is a shift from traditional beverages and food consumption spaces to more unconventional preferences that are authentic and reflect consumer needs.
The rise in demand for coffee has led to the increased popularity of roasteries and artisanal farm-to-cup coffee from Coorg to Chikmagalur, and beyond. The Indian spirit industry has also seen a spike in demand, as the evolving Indian youth loves to try out various Indian labels along with traditional drinks like feni.
In 2022, inspired by the exotic tastes and unique flavours of Indian specialities and internationally inspired food, consumers are expected to trade in their regular flavours in favour of niche products.
