Stimulate your appetite with this lip-smackingly healthy dip recipe

This easy-peasy, super tasty dip will not only make Iftar special but will add a dose of nutrition too without putting in too much effort. It works great as an appetiser or even as a spread with different kinds of breads. It’s going to be a crowd pleaser so ensure you make sufficient quantity and get set for some rave reviews.
1/3 cup fresh flat-leaf
Preheat your oven to 425°F/220 °C. Cut the eggplant into half and brush it with olive oil. Place it on a baking sheet. Make a small packet of aluminum foil to hold the garlic cloves with the remaining oil and place alongside the eggplant. Bake for 35 minutes. Let the roasted eggplant cool down a bit and then scoop out the flesh. Discard the skin of the eggplant.
Take another baking sheet and place the California Walnuts on it. Toast them for 5-10 minutes until they are light brown in colour. Blitz the walnuts and parsley in a food processor. Mix this with the lemon zest, lemon juice, honey, roasted eggplant and garlic, and add salt and pepper to taste. Blend the mixture together in a food processor until it forms a smooth paste. It’s now ready to be served. Enjoy this delicious dip with pita.
