Pomegranate Glazed Chicken with couscous: A delicious and healthy recipe by chef Sabyasachi Gorai to make your Iftar memorable

The holy month of Ramzan is a period of intense prayer and fasting from dawn to dusk followed by a feast known as Iftar. It brings with it feelings of brotherhood and compassion. People find pleasure in simple things such as preparing and sharing their Iftar delicacies with loved ones. From a health perspective, one cannot ignore the much needed nutrition during fasting.

This Ramzan, get an extra dose of health with walnuts. Not only do walnuts add flavor and crunch, but also provides omega-3 fatty acid, proteins and fibre. Here’s an interesting twist to the Iftar feast.

Try out this delicious and healthy Pomegranate Glazed Chicken with Couscous.

Serves: 4


The chicken

Sumac 1 tbsp 
Garlic 1 large clove, minced
Olive oil 1 tbsp
Salt to taste
Black pepper a pinch
Chicken thighs 4, bone in and skin on 
Pomegranate molasses 60ml 

The couscous

Couscous 160g 
Extra virgin olive oil 30ml 
Lemon juice 20ml
Pomegranate molasses 10ml
Flat leaf parsley a small bunch, roughly chopped
Mint a small bunch, roughly chopped
Pomegranate seeds from half of the fruit
California Walnuts 80g, toasted and roughly chopped


Mix the garlic, sumac and olive oil in a container. Season this mixture with salt and pepper and massage into the chicken thighs. Leave to marinate for at least an hour. Once marinated, place the chicken thighs on a barbeque over medium hot coals.

After 10 minutes, brush the chicken with the 60ml of pomegranate molasses. Continue cooking until the chicken is sticky and glazed on the outside and cooked right through to the inside.

Cook the couscous by following the instructions on the packet. Meanwhile, whisk together the extra virgin olive oil (10ml), lemon juice and 10 ml of molasses. Add the fresh herbs and walnuts along with pomegranate seeds. Mix it well and serve alongside the chicken.
